A recipe for an aromatic pear and thyme crisp, a delicious dessert served in a cast iron skillet.
Ingredients:
For the filling
5 large pears, peeled, cored & diced
2/3 c sugar
½ tsp salt
5 sprigs of thyme, leaves removed
For the topping
1 ½ c flour
1/3 c sugar
1/3 c brown sugar
½ tsp salt
½ c pecans, chopped
1 stick butter, melted until foamy & beginning to brown
Method:
Preheat oven to 350.
Put together all the filling ingredients in a bowl, set aside.
In a separate bowl, combine flour & sugars with cinnamon & pecans. Mix together & slowly drizzle brown butter, stirring with your hands until well-combined and crumbly.
Pour pear mixture into a cast iron skillet, top with prepared topping & bake for 30 minutes. Place pan on the top rack & bake an additional ten minutes until golden brown.
Serve with vanilla ice cream or mason jar whipped cream.**
**In a mason jar, fill half way with whipping cream, ¼ vanilla bean seeded, 1 tablespoon of sugar. Put the lid on tightly, and shake for 3-4 minutes until whipped.
