A recipe for a heart-warming, homemade apple cider, perfect for cozy nights beside the fire.
Ingredients:
10 apples (we love honey crisps)
1 large orange, peeled and sectioned
2 cinnamon sticks
6 cloves
1 tsp freshly grated nutmeg
3 sprigs rosemary
Honey, optional to taste
Method:
Chop apples into large chunks, cores, peels & all.
Add apples to a Dutch oven & cover with cold water.
Put the spices into cheese cloth, tied with twine, and add the bag to pot, tying the remainder of the twine to the handle.
Bring to a boil over high heat, then reduce the heat to low & simmer covered for 6 hours.
After 6 hours, remove the twined bag of spices & taste, adding honey if it isn’t sweet enough for you.
Using a potato masher, mash the apples to squeeze out as much flower as possible.
Line a fine sieve with cheese cloth and strain the apples & juice into a large container or jug.
Serve warm with a couple slices of lemon or chilled for a refreshing drink.
