Christmas Eve Maple Cookies

A recipe for our favourite glazed maple cookies, the perfect cookies to bake for Santa the night before Christmas.

Ingredients:


For the cookies

¾ cups salted butter

1 cup organic cane sugar

1 egg

1/3 cup organic molasses

2 ¼ cups flour

2 tbsp. baking soda

½ tsp. salt

Cane sugar for rolling


For the maple glaze

2 tbsp. melted butter

¼ cup local maple syrup

1 cup organic powdered sugar

Candied rosemary, pomegranate seeds, or chopped toasted nuts and candied citrus for garnish

Method:


For the cookies

Preheat oven to 350, line 2 sheet pans with parchment paper.

Cream butter and sugar in the bowl of a standing mixer until light & fluffy.  
Add the egg and molasses, and mix until combined.

In a separate bowl, mix the flour, baking soda and salt. 
Slowly incorporate flour mixture until a dough-like mixture forms.


Using an ice cream scooper, scoop and shape the mixture into small balls, then roll in the cane sugar.  
Place on parchment lined sheet pans and bake for 8-10 minutes.  
Once baked, remove from the oven and let them cool slightly.  
Move the cookies to a wire rack to allow additional cooling.


For the maple glaze

In a small bowl combine the butter and syrup

Add ¼ cup powdered sugar, mixing thoroughly each time.


Once cookies are completely cooled, dip one half of each cookie and place on parchment paper. 
Sprinkle with candied rosemary and pomegranate seeds, or chopped toasted nuts and candied citrus.
